1. Chana Masala (Chickpea Curry)

Ingredients:

  • 1 can chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 onions, finely chopped
  • 1 tablespoon ginger, minced
  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Preparation:

To prepare Chana masala, heat the olive oil at the moderate temperature. Then add cumin seeds and let them sizzle. After it, add chopped onions and cook until golden brown. Stir in garlic and ginger and cooking for 1 minute. Add chopped tomatoes and cook until they break down and then the oil starts to separate. Mix in coriander powder, chili powder, garam masala and turmeric. Then add chickpeas and stir well and cooking for at 10-15 minutes. Then season with salt and garnish with fresh cilantro.

Serve the Chana masala with basmati rice and whole wheat naan for a complete meal.

Preparation

Heat the oil in a pan and add cumin seeds and let them crackle. Add ginger, onions and garlic. Cooking until onions are translucent. Then stir in tomatoes and cook until they soften. Add chopped spinach and cook until wilted. Blend the mixture until smooth. Then return to the pan and add tofu cubes. Cooking for 5-7 minutes.

3. Aloo Gobi (Potato and Cauliflower Curry)
